Sustainable Development and Gastronomy Evaluated: Restaurant Gösta Included in the 360° Guide
Restaurant Gösta, located at Serlachius in Mänttä, has been selected for inclusion in the prestigious European 360° Eat Guide, which evaluates not only gastronomic merits but also the restaurant’s environmental and sustainability efforts.
The 360° Eat Guide is the first restaurant guide that literally looks beyond the plate. It rewards pioneers of modern, transparent gastronomy. The aim is to highlight restaurants that operate based on sustainable development principles and also value the people working behind the scenes: producers, suppliers, and colleagues.
The 360° guide includes restaurants from ten Western European countries. From Finland, 34 restaurants are included.
Restaurateur and Chef of the Year 2001, Henry Tikkanen, explains that inclusion in the guide was preceded by an extensive survey, which required detailed information on, among other things, the restaurant’s use of local food, producer network, waste reduction, sorting and recycling, and staff well-being.
The survey is offered to restaurants believed to have the potential to meet the entry requirements. Additionally, the restaurant was evaluated on-site. “The selection is a great honour for us. It also encourages us to work even harder towards sustainable development,” says Henry Tikkanen.
An Important Part of Serlachius’ Responsibility Work
Serlachius, based in Mänttä, has been systematically working on environmental and sustainability issues for years. This is evidenced by the ISO 14001 environmental management certificate obtained by the museums in 2021, which was renewed at the end of 2024. Serlachius also holds the Sustainable Travel Finland label awarded by Visit Finland.
