Restaurant Gösta adds sustainable pike burger to its summer menu

Restaurant Gösta at Serlachius in Mänttä has taken another concrete step in support of Finnish local food. The restaurant now serves a pike patty in its popular burger dishes, made from fish caught in Keurusselkä and Lake Ähtärinjärvi. The fish is sourced from small-scale local fishermen. 

This seasonal newcomer responds both to growing interest in Finnish lake fish and to the restaurant’s own ambition to develop a sustainable and memorable culinary offering. 

“We want to stand out by creating truly excellent food from local ingredients. The pike burger meets all these criteria,” says restaurateur and chef Henry Tikkanen. 

Restaurant Gösta’s choice also carries wider significance. Serlachius welcomed around 85,000 visitors last year, and the restaurant’s burger dishes are among its most popular. When a favourite dish is updated with Finnish lake fish, the result is a genuinely impactful food choice. 

In Finland, there has long been discussion about how to make better use of freshwater fish. Restaurant Gösta offers a practical example of how local fish can sit naturally within a modern, high-quality kitchen. 

The pike burger is also shaped by sustainability and changing eating habits. “Moderation in meat consumption and a focus on vegetables and fish are reflected in the way we plan our menu,” Tikkanen says. 

Introducing the pike burger to the menu at the height of the busy summer season makes it a genuinely impactful environmental choice – and, at the same time, a delicious new reason to stop by Serlachius in Mänttä.
